SNS Marinated Cucumbers


  • 1 English cucumber
  • 4 tsp rice vinegar
  • 4 tsp Dijon mustard
  • 1 tsp Kosher salt
  • 1 tsp sugar, optional
  • 2 Tbsp olive oil
  • Sprinkle of dill


  • Peel cucumber, slice down the middle, and scoop out seeds — cut in 1/8 inch pieces and place in a bowl
  • Mix vinegar, mustard, salt, and sugar (omit sugar during NSC)
  • Drizzle 2 Tbsp olive oil into the ingredients above slowly, while whisking
  • Pour marinade over cucumbers, sprinkle with dill 

Refrigerate for 30 minutes before serving, enjoy!
