SNS Breakfast Hash

  • 1 sweet potato, cubed or spiralized
  • 3 pieces of bacon, cooked and cut into small pieces
  • 1 apple, cubed
  • ½ cup pecans 
  • 2 Tbsp olive oil
  • ¼ cup apple cider vinegar
  • 1 tsp salt n’ pepper mix
  • ¼-½ tsp red pepper
  • Handful of arugula
  • 1 egg, over easy (optional)
  • 1 cup shredded chicken (optional)

Prep and Cook

  • Heat olive oil over medium heat in a wok or large skillet
  • Add pecans and cook for 3-4 minutes
  • Add sweet potato, apple, and bacon 
  • Continue to stir frequently
  • Add chicken and mix
  • Add salt and red pepper, mix
  • Add vinegar and cover immediately for 2 minutes
  • Uncover, mix, and add arugula — give a final stir

*Add egg on top of each serving, if desired (it’s great with or without)

**Try spiralized butternut squash and walnuts. It’s equally as delicious.
