SNS Curried Noddles with Salmon


  • 1 package rice noodles
  • 1 pound of salmon, cut into 1-inch pieces
  • 1 can coconut milk
  • 2 Tbsp curry powder
  • ¼ cup orange juice
  • 1 Tbsp orange zest
  • Cilantro, for garnish

*Substitute tofu for salmon for plant based option

Prep and Cook:

  • Bring coconut milk, orange juice, orange zest, and curry powder to a boil in a saucepan
  • Reduce heat, add salmon and rice noodles
  • Cover and simmer for 4-6 min or until rice noodles are soft

SNS tip: soak rice noodles in hot water for 2 minutes, strain and add to sauce
