SNS Lentil Salad

Ingredients:

  • 1 cup dry lentils (2 cups when cooked or canned)
  • 1 English cucumber, seeded and chopped
  • ¼ red onion, chopped
  • ½ cup goats cheese
  • 2 TBSP dried dill
  • Juice from 1 lemon ( 3 TBSP)
  • 1 TBSP vinegar ( I like red wine in this)
  • ¼ extra virgin olive oil

Rinse and simmer lentils for 6-8 minutes, drain

Mix all off the above together (add grilled chicken or sautéed tofu to ‘beef’ it up a bit). Enjoy!
