SNS Purple Sweet Potato Hash

Ingredients:

  • 1 large sweet potato, spiralized
  • 1/2 cup raw pecans
  • 1 baby bok choy, sliced
  • ½-1 cup cooked chicken, shredded
  • ¼ cup apple cider vinegar
  • 1 Tbsp olive oil
  • ¼ tsp cayenne pepper
  • salt + pepper, to taste

Prep and Cook:

  • Roast raw pecans over medium heat for 3-4 minutes
  • Add olive oil and chicken, and sauté until heated through
  • Add bok choy, sweet potato, and continue to sauté
  • Add apple cider vinegar, cayenne pepper, and salt + pepper 

Serve and enjoy!
