SNS Chicken & Kimchi Bowl (or Salad)


Serves 2

  • ½ pound chicken, cooked and shredded
  • 3-4 Tbsp Kimchi
  • 1-2 handfuls cashews
  • 1-2 handfuls greens (arugula, kale, spinach)
  • 1-2 tsp tamari, to taste
  • Salt n’ pepper, to taste
  • 2 Tbsp olive oil
  • Optional white, brown, or cauliflower rice

Prep and serve:

  • Place olive oil in a skillet (or griddle) over medium-high heat
  • Add chicken, season with salt n’ pepper and sauté until slightly crispy
  • Add kimchi and cashews, cook and stir for 2-3 minutes
  • Add salad greens and sauté for 1 minute
  • Add tamari and more S&P to taste

Serve on its own or over a bed of rice — enjoy!
